Sensory Analysis
Question: What is Sensory Analysis?
Sensory analysis is a scientific discipline that measures human response to the composition of food and drink, for example; appearance,touch,odor, texture and taste. In schools it provides an opportunity for students to give feedback on their sample test products.
Hypothesis: Students will compare characteristics in a range of food samples.
Procedure:1-We will have an area free from noise and cooking smells which could distract the people taking the test.
2-We will present each participant a random coded sample which they will attempt to identify first by smell and then by taste. 3-Testers will have water to cleanse their palates in between each sample. 4-Each person will taste one sample at a time, and we will record their responses. |
The Science behind it
By analyzing several examples of food products, the testers will be able to provide feedback such as; like/dislike, and identify specific characteristics of an ingredient. This testing not only relates to human senses in relation to everyday foods,but to consumer product development,international trade,global cuisine and food culture as pertains to the individual.
Conclusions
By participating in Sensory Analysis, students will be able to evaluate a range of everyday food products. They will give an opinion as to acceptable vs. unacceptable, and if a product can benefit from improvement.They will be able to gauge specific characteristics of a dish or ingredient, and make informed decisions regarding the foods they consume.
